In 2006, three of my mother’s best friends (and second moms to me) hosted a wedding shower for me. They asked everyone to bring a recipe card of their favourite recipe. My friend, Tricia, gave me her pumpkin bread recipe and it has been a family favourite ever since. People always ask me for the recipe! Today, with Tricia’s permission, I’m making her famous pumpkin bread available to you. It’s a hit with kids and adults alike. Unlike most people, my baking in the past few weeks has been limited but this is a welcomed treat. I hope you enjoy it!
Here is Tricia’s recipe:
3 cups of white sugar
1 cup Oil (vegetable or Canola)
4 eggs
2/3 cups water
2 cups pumpkin
3 1/2 cups flour
2 tsp baking soda
1 1/2 salt
2 tsp cinnamon
1 tsp nutmeg
1/4 ginger
Cream together first 5 ingredients. Combine dry ingredients in separate bowl. Add wet mix slowly to dry mix. Pour into loaf pan; bake 1 hour (til spaghetti or knife comes out clean).
My notes: I am generous on the spices and on the amount of pumpkin I put in, and I use a little less sugar. I also use a fork to test it, and I use two small loaf pans instead of one large pan.
